Slow Cooker Meatloaf Recipe

Image
Slow Cooker Meatloaf Recipe With fall almost here this Slow Cooker Meatloaf Recipe is going to become a weekly meal in our house. This past weekend I was asking the family what they would like for dinner and everyone was wanting meatloaf. I was excited as it allows me to stretch my ground beef further which saves me $$’s. GREEK YOGURT BREAKFAST BARK

Image
GREEK YOGURT BREAKFAST BARK This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. Thanks to the brands who continue to make Go Eat and Repeat possible. In addition to hurting my back getting out of bed and being tired all the time, the other thing that makes me feel old is the fact that I now own eye cream. I guess it was bound to happen eventually.  The packaging says it is “firming eye cream” but what I really could use it for is to help erase those dark circles under my eyes which seem to be a constant these days. In addition to being busy, the stress over work and school definitely doesn’t help. And hey, with my wedding getting close to a year away, it’s time to start some of these beauty treatments!  In addition to beauty treatments like eye creams, I know I need to start watching what I eat more. I TRY to eat well most of the time. Sometimes though, on long days, I just don’t have the time or energy to put into making so...

Easy Beef Stew

Image
Easy Beef Stew A lot of stew recipes call for cooking the meat and vegetables at the same time, leaving the latter overcooked and mushy. Here, you first braise the meat with onions in red wine and beef broth until a rich sauce develops. Then, after about an hour, add carrots, celery, and potatoes. By the time the vegetables are cooked, the beef is perfectly tender—all that’s left is to stir in some frozen peas for a little freshness and color. Spoon this rich, dark, comforting stew over egg noodles, Polenta, or our Celery Root PurĂ©e, or just pass around plenty of crusty bread to scoop up all the rich sauce. INGREDIENTS (15) 1/4 cup plus 1 tablespoon all-purpose flour 2 teaspoons kosher salt, plus more for seasoning 1 teaspoon freshly ground black pepper, plus more for seasoning 1 (3-pound) boneless chuck roast 3 tablespoons vegetable oil 1 medium yellow onion, large dice 2 tablespoons tomato paste 1 cup dry red wine 4 cups (1 quart) low-sodium beef broth 2 bay leaves 4 fresh thyme spri...

Keto Enchiladas

Keto Enchiladas Zucchini's have a ton of super awesome nutritional benefits, but when I was researching for this post one fact kinda sorta blew my mind. Grilled Cheese Breakfast Sandwich

Image
Grilled Cheese Breakfast Sandwich A delicious alternative to the traditional Grilled Cheese Sandwich. Grilled Cheese Breakfast Sandwich is filled with cream cheese and strawberry preserves in this sweet and savory combination. You’re going to want to make this stat! Let me tell you, I am tired! Stressed! I’m so glad it’s Friday. Can I have that martini intravenously? The problem is saying ‘No’. It’s a common characteristic of Motherhood. We feel it’s our duty to take care of and make everyone happy. I over filled my plate! It stresses me. And, on a completely different note, Ryder had a pair of underwear in his backpack. They were his, I recognized them. Yes, I checked to see if he had underwear on. He did. Strange. Mysterious. Scary!! On to the sandwich — Grilled Cheese Breakfast Sandwich I don’t know how or when I started making this Grilled Cheese of sorts. It’s been a very long time. I love grilled cheese sandwiches. I love cream cheese. Grilled Cheese Breakfast Sandwichseems with ...

EASY BASIL PESTO

Image
EASY BASIL PESTO Though I may not be able to take care of a basil plant from my top-floor city apartment, I sure do love to chop up those gorgeous green leaves for a salad, pasta dish or pesto. Just look at that color! That isn’t Photoshop, folks. Okay, maybe it’s a little Photoshop. Basil pesto, if you’re unfamiliar, is just a ground up mixture of fresh basil, pine nuts, garlic cloves and olive oil. It tastes very fresh, smooth and a little nutty, and it is deeee-lish on a slice of Italian bread, mixed into pasta, spread on a pizza, sandwiches, potatoes and grilled meat and vegetables, or as a marinade or stuffing for meat, chicken and fish. There are limitless things you can do with a little glob of this green spread! Best of all, pesto is SO simple to make. Here, I’ll show you how: The whole reason I made basil pesto in the first place was because I’m hightailin’ it to Texas tonight and had truckloads of basil and pine nuts that I didn’t want to waste. So, if you also don’t plan on ...

Chocolate and Salted Cashew Caramel Brownie Cake

Image
Chocolate and Salted Cashew Caramel Brownie Cake Although this recipe has a somewhat grand title, in reality, it is super-simple to make. There is even some cheating going on (ready made caramel…shhh!), to make your already busy life just that little bit easier. The hardest part (if it’s fair to call it “hard”) is the brownie, which is based on my “go-to” recipe, also used in these rich dark chocolate and marshmallow versions. The rest is just a case of melting a little chocolate, pouring over gooey caramel and sprinkling some nuts. The end result, although simple to prepare, is beyond delicious. Decadent and rich, it is certainly not going to help with your diet; but hey, ho, a little bit of what you fancy does you good. Don’t you think? Ingredients Brownie: 100g (3/4 cup) dark chocolate 100g (just under 1/2 cup) butter 50ml (3 tablespoons) strong brewed coffee 60g (4 tablespoons) brown sugar 65g (4½ tablespoons) white sugar 2 eggs 1 teaspoon vanilla sugar 40g (1/4 cup) plain (all-pur...

SPAGHETTI SQUASH BOATS WITH SPICY SAUSAGE

Image
SPAGHETTI SQUASH BOATS WITH SPICY SAUSAGE I love spaghetti as much as the next person, but ohh do I hate those carbs. The first time I ever tried spaghetti squash I was sooo skeptical (and I tend to be super picky) – I mean how in the world would squash taste as good as pasta?? Well clearly vegetables have been surprising me lately and YES, this is another winner folks. Creating the “noodles” from this squash is so incredibly easy. Seriously – if you can boil water, you can make spaghetti squash. Plain. and. simple. All you have to do is cut the squash in half, scoop out the seeds, bake them {cut side down} for about 45 minutes in the oven then start scraping with a fork! Boom spaghetti. I seriously can’t believe it’s now officially Fall, I feel like summer flew by just like that! Trust me I’m not complaining, I’m all about the pumpkin spiced lattes, cozy sweaters, boots with leggings and admiring all the pretty foliage, but when I left work yesterday it was over 80 degrees! Mother nat...
